The Settings tab in the org menu will allow you to set the color you want your org's name to appear as. As well as the Org Color you will also be able to change your org's flag. Org Flags are 64x64 Images that appear on org tagged doors and above org members names. You can make a custom Org Flag through the in-game editor, however you may also convert an image to an flag. It is recommended that before you attempt to convert an image to a flag, you set a picture frame up using that image, as they use the same aspect ratio.
